酥皮蟹盒

酥皮蟹盒主料:面粉400克、豬肉150克(去皮)、熟蟹肉100克、荸薺肉100克、鮮蝦肉150克、濕香菇50克、豬油1000克(耗250克)。

配料:味精、胡椒粉、濕淀粉、芝麻油、精鹽各少許。

做法:1、將豬肉、蟹肉、蝦肉、香菇、荸薺肉均切細粒,用淀粉水拌過,下鼎炒香,加入精鹽、味精、胡椒粉、芝麻油和濕淀粉(少許)調成餡料。2、取面粉160克,加入豬油80克拌和,搓成酥心,又把面粉240克,加入豬油80克和清水90克拌成面皮。3、將酥心、面皮各分成24件。用面皮包上酥心,用棍子搟薄攤開,卷起再搟,再卷起,用刀一切為二,逐件搟成薄圓形。4、先取1張皮子,放入餡料,再取1張皮子覆蓋在上面,四周捏緊,再卷成花紋邊,制畢后,下六成熱油鼎,用文火炸至金黃色取出,瀝去油便成。

特點:色澤金黃,餡香皮脆。
