南乳白鱔球

用料:

白鱔1條約500克,南乳兩塊,蒜茸20克,紹酒2.5克,味精5克,麻油10克,雞蛋1個,生粉100克,胡椒粉0.5克。

制法:

(l)先將白鱔宰殺,去掉粘液,洗凈用干凈布抹干,起肉,再將魚肉用花刀法片后改成鱔球狀待用。

(2)將南乳、酒、味精、胡椒粉、麻油一起攪勻后,把鱔球放入,腌制約5分鐘,再拌入蛋白、生粉待用。

(3)將鼎燒熱,先放入少許生油,把蒜茸放入炒至成蒜茸油待用,再將油鼎洗凈燒熱,倒入生油,候油溫熱至180℃~200℃時,把鱔球放入油鼎炸至熟透,盛在盤間,再把蒜茸油淋上即成。

特點:

色澤鮮艷,口感酥香。
