紅燜海參

用料:

浸發(fā)海參750克,蝦米25克,豬五花肉500克,浸發(fā)香菇75克,帶骨老雞肉500克,甘草0.l克,姜片10克,蔥條15克,精鹽25克,味精5克,珠油5克,芝麻油5克,淺色醬油15克,紹酒15克,白酒10克,濕淀粉l0克,淡二湯1750克,熟豬油l50克。

制法:

(l)將海參切成長約6厘米、寬約2厘米的塊。雞肉、豬肉也切成塊。

(2)海參放入沸水鍋內(nèi)滾焯約5分鐘,撈起。用中火燒熱炒鼎,下豬油25克,放入姜、蔥、白酒,加二湯、精鹽5克,下海參煨約2分鐘,倒入漏勺瀝去水,去掉姜、蔥。

(3)炒鼎洗凈放回爐上,下豬油50克,放入海參略炒,倒入已用竹蔑片墊底的沙鍋里。炒鼎再放回爐上,下豬油50克,放入豬肉、雞塊,烹紹酒,加二湯、醬油、珠油、甘草推勻,倒入沙鍋里,加蓋,用旺火燒沸后,轉(zhuǎn)用小火燜約l小時(shí),再加香菇、蝦米,燜約30分鐘至軟爛。去掉豬肉、雞塊、甘草,撈超海參、蝦米放入盤中;用濃縮原汁300克下鍋,加入精鹽20克、味精,燒至微沸,用濕淀粉調(diào)稀勾芡,最后加入麻油和豬油25克推勻,淋在海參上即成。
