名小食。蠔烙為潮汕傳統食品,市場炒賣或家庭膳食均極普遍。最先在汕頭市安平路漳潮會館(俗稱老會館)左旁,有幾攤賣蠔烙的小吃店,由于制作精工,故有老會館蠔烙的稱譽。

1930年前后,楊二首先在升平路西天巷口營業,后來又有胡錦興、姚老四等人相繼在附近繼續專賣。為了生意競爭,他們各自設法提高烹制技術和質量,形成了馳名海內外的西天巷蠔烙。

蠔烙以鮮蠔(學名牡蠣)為主料,以鬃頭肉煎解的豬油、上等雪粉、鮮鴨蛋為配料,辣椒醬、上等魚露、蔥粒等為調料。用料專選達濠蠔仔、雪粉、蔥粒拌勻下平底鍋(俗稱煎鼎),用旺火厚膋烙煎,淋上蛋漿,并配入適量上等魚露、辣椒醬,煎至兩面呈金黃色。品嘗時放上洗凈切碎的芫荽和配上上等魚露為佐料。具有外酥內嫩,香脆鮮美的特點。
