火腿扒魚肚

火腿扒魚肚;原料:魚肚

130克,金華火腿25克,菜心40克,鹽1克,糖1克,料酒2毫升,胡椒粉0.2克,淀粉1克,植物油15克,姜3克,高湯50克。

制作過程:1、魚肚用溫水洗凈,切成約3厘米的片。金華火腿切片約3厘米長、2厘米寬,上籠蒸透備用。油菜心洗凈備用。2、魚肚用開水氽一遍,再用蔥、姜、料酒加水氽第二遍。3、鍋上火入油煸蔥、姜,加入高湯、料酒、鹽、味精,下魚肚,待魚肚燒爛煮透,嘗味裝盤。4、油菜心同時燒透碼放在魚肚上,蒸好的火腿片碼在上面。5、勾芡汁澆在菜肴上即成。風味特點:

色澤白亮,口味咸鮮,魚肚軟糯,火腿香嫩,菜心清爽。
