爆烏花;原料:鮮墨魚肉500克、水發玉蘭筍片25克、木耳、青豆、蔥末、姜末、蒜末各5克、香菜15克、大蒜末3克、紹酒5克、白糖、味精、胡椒粉各1克,水淀粉5克,花生油60克。(色香味:刀工精細,脆嫩色白,滋味鮮美。

制法:1)鮮墨魚洗凈,切成荔枝花刀塊焯水瀝干;

2)花生油燒至6成熱,投入蔥末、姜末、蒜末煸香;

3)再放入烏花、玉蘭片、木耳、青豆、香菜及調料勾芡,裝盤后撒上胡椒粉即成。
