是金湖的一樣家常菜。無論是家庭小宴,或是親朋聚會,宴桌上總少不了一盤黃澄澄、油潤潤、香酥可口的煎藕夾。

外地人雖然也有這種吃法,但絕沒有金湖普遍,做法也不及金湖的細(xì)致。藕去皮洗凈,切成如紙的薄片,切時要特別小心,必須兩片連在一起,這樣才便于包餡。做肉餡也有些講究,選料既不能太肥也不能太瘦。將肉剁成糊狀之后,放時蔥、姜、鹽、糖、味精等佐料,然后把肉糊夾在兩瓣薄藕片中。藕夾包好后就是和面,面要調(diào)成稀稠均勻的面漿。面漿里要摻進(jìn)少量的礬和堿,這樣煎出來的藕夾才又酥又脆。若是在面漿里加上兩個雞蛋,煎出來的藕夾不僅鮮嫩,而且黃澄澄的更好看。面漿調(diào)好后,把藕夾放在面里沾滾,讓面漿糊住藕孔,然后放進(jìn)油鍋里煎炸。煎藕夾對火功十分考究。首先要急火將油燒滾;火太弱,煎成的藕夾就不酥。待藕夾炸到八成熟,再撈起放在平鍋里煎炒,將油炕干起脆,直到呈現(xiàn)出黃里透紅的顏色,加上香料和白醋,這藕夾便做成了。
