原料:蟹粉50克,特色粉皮300克,青蒜末。

調料:鹽,味精,胡椒粉,姜末,黃酒,生粉,上湯,精制油。

制作:將特制粉皮改刀后入沸水中略燙一下,用戶清水中漂洗。將炒鍋置于旺火中,倒入精制油,加姜末略煸一下加蟹粉炒勻,烹黃酒,加上湯、粉皮、鹽、味精、胡椒粉煮沸后,用水淀粉勾芡,投入青蒜末,用勺子輕推均勻,就可以起鍋裝盆。

特點:色澤黃白相映,滑糯爽口。
