藏族酸奶

青海省藏族地區是牛奶的海洋,從春到夏,從夏到秋,鮮奶源源不斷地流進奶桶。用牛奶制成酸奶,是藏族老少喜食的佳品。

制作方法:

1.將牛奶煮沸,倒入容器內,加入少量酸牛奶作發酵劑,溫度控制30~40℃,使乳酸菌大量繁殖,將牛奶中的乳糖分解成乳酸。

2.隨著乳酸酸度的不斷增加,牛奶中的酪蛋白開始沉淀,就凝結成嫩豆腐狀的酸奶,并產生一種芳香氣味,即可食用。

產品特點:色潔白,宜解暑生津。
