海參玉芙蓉

海參玉芙蓉,蒸點,特點:造型美觀,皮軟糯,餡味濃香微辣。烹制法:蒸。此品可與雞絲湯、魚圓羹配食。

水發海參切成指甲片,用湯煨好。肥、瘦豬肉剁碎,郫縣豆瓣剁細,細蒜苗花(細蔥花亦可),冬筍切成小指甲片。

鍋內燒化豬油,肉入鍋熵散,下豆瓣熵呈紅色(亦可先煽豆瓣摻湯撈出渣不用),摻湯,下海參、醬油、鹽同燒,再下蒜苗花、味精,勾芡起鍋成餡

大米吊漿粉子煮熟后擂成團,做成每個重15克的劑子,將劑子按扁包入餡心,封口向下捏5個花瓣壓上花紋,中間安上紅、黃兩色花蕊,入籠蒸制即成。

操作要領:海參一定要選用軟的,味不宜咸,辣味要適中;封口要牢。
