府谷拔絲山藥 

  拔絲山藥府谷人把土豆叫山藥,不是薯蕷。將土豆削皮洗凈,滾刀切瓣,放入油鍋炸金黃撈出備用。炒瓢里加少許油放火上煉熱,再加入白糖一大勺,用勺不斷攪動,待糖煉成汁,色變微紅,立刻放入炸好的熱山藥塊,快攪使糖汁裹勻,裝盤上桌,趁熱快吃。做此菜講究一個快字,糖色剛變,即放山藥,慢了糖煉老則焦;裝盤上桌也要快,慢了糖冷則硬;上桌要快吃,不然糖冷凝結,不僅拔不出絲,土豆被糖凝成一塊,撬也撬不開了。同樣方法,也可做拔絲紅薯。用蘋果拔絲稍復雜些,蘋果削皮切瓣去核,裹上面糊,急火炸成金黃,必須用急火,使面糊快熟而蘋果尚冷,即所謂“皮焦里頭生”才好。后面做法與拔絲山藥相同。
