奶品

最普遍的是酸奶子和奶渣兩種。酸奶子又有兩種,一種是奶酪,藏語叫“達雪”,是用提煉過酥油的奶制作的;另一種是沒提過酥油的牛奶作的,藏語稱“俄雪”。酸奶子是牛奶經過糖化作用以后的食品,營養更為豐富,也較易消化,適合老人和小孩吃。奶渣是奶提煉酥油后剩下的物質,經燒煮,水份蒸發后,剩下是奶渣。奶渣可以做成奶餅、奶塊。在煮牛奶過程中,還可揭起奶皮,藏語叫“比瑪”。奶皮就象豆腐皮一樣,好吃又富有營養。奶品是藏族的重要食品,家居或外出,人們都帶著它。在零食品種不多的西藏,大人們常把奶渣給小孩當零食。( 拉薩)
