玉溪油鹵腐相傳始制于明清之際,當時境內家家戶戶腌制,作為家用咸菜,或作饋贈外地親友的禮品。后來發展為小商品生產。油鹵腐的腌制,以黃豆制成的臭豆腐為主料,要求質地細膩,塊狀均勻,厚薄一致。臭豆腐經陽光照曬,排去外層水分,分別濃淡不同的口味,配以適量的糧食白酒浸裹,再以白糖、精鹽、辣椒、優質八角、花椒粉等卷在皮層,并滲以煉熟的上好菜油,腌制而成。玉溪油鹵腐以其色、香、味的佳美深受省內外群眾的歡迎,遠銷北京。1982年獲云南省商業系統優良產品稱號。
