  皮蛋炒辣椒
  材料:
  皮蛋4個、辣椒2個、青蒜1根、蒜末半大匙、淀粉適量。
  調味料:
  辣豆瓣1大匙、醬油半大匙、水1/4杯、糖半茶匙
  作法:
  1.皮蛋去殼,用線劃切成4等份,每片沾一層干淀粉,再用1碗油炸酥外皮后撈出。
  2.青蒜斜切小段,辣椒去籽、斜切片;用2大匙油炒蒜末、青蒜和辣椒后,加入所有調味料及皮蛋同炒。
  3.炒勻并收干湯汁即可盛出。
  叮嚀與解說:
  1.皮蛋用刀切會粘刀,用線劃切小片比較好。用一根縫衣線,咬住一端,另一端用手拉直,一手拿皮蛋即可劃開。
  2.皮蛋沾少許淀粉后炸過再炒,這樣外酥內嫩,而且炒后不會糊。
