荷花鐵雀,有獨特風味,吃時酥脆爽口。鐵雀是連云港市沿海地區特產,將其炸至外焦脆、里鮮嫩,澆上糖醋汁,即成。

所需材料:鐵雀450克。糯米粉25克。紹酒20克、精鹽2.5克、蔥姜汁15克、蒜末7.5克、醋25克,白糖50克、芝麻油15克、花生油750克(實耗油50克)。

制作方法:鐵雀捋去毛,從尾剖開一小口,擠出內臟,再從脊背部開剔去胸骨,拍斷脊骨、腿骨,斬去嘴尖,挖出雙眼,洗凈。將治凈后的鐵雀放入缽內,加紹酒、精鹽、蔥姜汁拌勻腌漬10分鐘,取出,拍上糯米粉。鍋置火上,舀入花生油燒至七成熱(約175℃)時,放入鐵雀炸透撈出,稍涼,再將鐵雀重油炸至酥脆,撈入盤中。原鍋上火,放油,投入蒜末炸香,加入醋、白糖。清水熬稠,淋芝麻油,起鍋澆在鐵雀上即成。
