豆類或山芋的淀粉,加適量水稀釋成糊,煮熟后冷凝成塊,俗稱“涼粉’。連云港的涼粉種類多,有豌豆粉、綠豆粉、山芋粉等,爽口清香味濃。涼粉的制作各人有各人的竅門,往往秘不示人。涼粉的吃法一般有熱吃、冷吃兩種。熱吃,是把涼粉放在燒熱的平底油鍋上,略煎一下,等底部有一層焦黃的皮后取出切塊食用。冷吃,即將涼鉛直接食用。吃前,將涼粉切成塊狀,或刨成面條狀,還有事先用漏勺漏成“娃娃魚”狀,放入清水中,待吃時取出,根據顧客的口味放佐料,如放醬油、醋、麻油、蒜泥等;喜歡吃辣的人,還可以加入一些辣椒醬,風味獨特。夏季吃涼粉消暑解渴;冬季熱吃涼粉多調辣椒又可祛寒。來連云港不嘗嘗涼粉,確是一件憾事。
