山馬菜,學名“絲石竹”,又叫“霞草”。因在粉綠色圓莖上,生長著肉質披針狀長圓葉,很象田間的馬菜,加之生于山間,故俗稱“山馬菜”

連云港山馬菜莖葉鮮美,民間歷來就有食用習慣。每年清明前后至初夏期間,莖葉肥嫩,天氣干燥,為最佳采制時間。將其鮮嫩莖摘下,洗凈,反復搓揉,去盡泡沫,用開水一燙,切碎拌上佐料,即可作涼菜,味鮮異常。民間多將其揉凈,燙后曬干備用。吃時以溫水泡開切碎,或冷拌作涼菜,或配以粉絲、豆腐丁、肉丁之類做包子,別有風味

山馬菜根可以入藥,治陰虛潮熱、久瘧、小兒疳疾等癥。其根搗碎漚水,還有去污功能,為天然去污劑。(連云港)
