粉湯餃子

粉湯餃子,俗名“皮條拉石頭”。餃子餡可用豬肉或羊肉,配以白菜、蘿卜和各種佐料,采用傳統方法包成餃子。再選粉質豐盈的扁豆,制成粉坨。這種粉坨放在鍋里有彈性,略透明,久滾不糊。烹調時,先在翻滾的湯鍋里放入切成條狀的粉坨,將另一鍋里煮好的餃子和粉條,一齊倒入湯鍋中,臨出鍋時,調放食鹽、生蔥、醋、油潑辣面子、味精等。其味酸辣可口,有發熱去寒之效,頗適寒冷地區人們食用,成為阿拉善的傳統風味之一。
