羊肉枸杞芽

將羊肉洗凈切成薄片,裝入碗內,加精鹽、花椒水腌漬入味,再加入蛋清。水淀粉抓勻上醬。枸杞嫩芽用冷水撤去苦味。把上漿的肉在六成熱的油里滑散,斷生后控盡油。炒勺留適量底油,置火上,放上枸杞芽爆炒幾下,放入精鹽、花淑水、馬耳形蔥片、姜水、清湯、味精,倒入肉片,用水淀粉勾芡,撒上泡軟的枸杞粒,淋上明油,翻勺裝盤。這盤菜白、綠、紅三色相間,品嘗時清香爽口,風味獨特。
