干煸牛肉絲

干煸牛肉絲,四川名菜。將牛肉絲煸干水氣,加辣椒絲等炒制而成。特點是滋味麻辣鮮香。此菜起源于自貢市,歷時已數(shù)百年。現(xiàn)已流傳四川各地,成為市肆常見菜肴。原料:鮮牛腿肉、蒜苗、芹菜。

調料:郫縣豆瓣、辣椒絲、姜絲、花椒粉、味精、料酒。制法:鮮牛腿肉洗凈切成粗絲。蒜苗、芹菜切段。炒鍋置旺火上,放菜油燒至210℃,下辣椒絲微炒撈起,再放牛肉絲煸干水氣,加郫縣豆瓣炒至油呈紅色,加適量料酒、鹽、醬油炒入味,放姜絲、蒜苗、芹菜炒熟,再下干辣椒絲、味精合勻,起鍋裝盤,撒花椒粉即成。此菜做法因牛肉腥膻味重,故用味宜厚,宜以青蒜苗、芹菜、老姜等輔料增鮮、提香。
