正宗的壽光特產,很多外地人來壽光根本不知扒谷為何物,普通飯店里更是見不到這道菜,作為名符其實的壽光特產,外地人卻幾乎沒有機會吃到這道美味。每年的秋冬臘月正是做綠豆扒谷的時節,這時候做的扒谷不易變質,味道鮮美。制作方法是:精選上等綠豆浸泡,用石磨加入菠菜或青蘿卜一起磨碎,然后攢成團上鍋蒸熟即可,綠綠的甚是好看,真正的“綠色”食品。吃法多以豬肉炒扒谷為主,用豬油炒鍋,將扒谷炒熟,放入粉條韭菜等,烹飪時尤其注意不能放入過多水,做好的扒谷松軟鮮香、回味悠長。
