 芥茉雞

芥茉雞是濰坊傳統地方名吃。芥茉雞做工精細,方法獨特。即把當年生雄性散養雞宰殺、脫毛、去內臟,洗凈后,加入八角、白芷、生姜、生蔥、醬油等30多種調料,腌制12小時。然后將腌制好的生雞置于鍋中,加入水、醬油、配料紗布袋,用木炭火敞鍋蒸煮45分鐘。最后將煮好的熟雞分成長條、加入精制醋泡制的芥茉、蔥絲、幼香菜、香油、雞精、醬油醋,在瓷盆中拌勻即成。用此方法做成的芥茉雞,呈醬紅色,味清而嫩,香而不膩,清淡爽口,辣而刺鼻,營養豐富,是招待賓朋、饋贈親友之佳品。
