  蕎面馎饦

  蕎面馎饦好吃,可做起來比較麻煩。先將面和好,軟硬適中,然后用手搓成手指粗細的圓條條,夾在左手,右手將面揪成指頭蛋大小的小塊,拇指一搓一捻,便成了一個個小小的面卷兒,玲瓏小巧,薄而不粘。捻馎饦要有技巧,好手段的媳婦一捻一個空卷兒,個個形狀似棗核。

  馎饦捻好后,將羊肉切成碎丁,再將洋芋也切成同樣大小的碎丁,熬成羊肉臊子湯,放上花椒、干辣椒、黃花、蔥絲、芫荽、味精等調料。吃時將馎饦煮熟撈在鍋里,再倒上臊子湯,用筷子一攪,碎羊肉丁就鉆在馎饦里邊,吃起來耐嚼,香味可口,別有一番滋味。定邊有“蕎面馎饦羊腥湯,死死活活相跟上”的信天游,說明蕎面馎饦和羊腥湯最好。
