牛撒撇的制作最考究的是作料。制作時先將牛肚、腰里肉、直腸、肝、脾等洗干凈后用水煮,煮時必須保持肉質鮮嫩。煮熟即撈出,切碎,撒上花椒粉、香辣蓼、韭菜、辣子、大蒜等作料,倒入事先做好的苦腸汁和少許刺五加汁,再加上少許的肉汁,拌均勻就可以食用。
