紅茶的制作工藝

紅茶的制作工藝主要有4步,紅條茶為萎凋、揉捻、發(fā)酵、干燥。紅碎茶為萎凋、揉切、發(fā)酵、干燥。

1、萎凋是鮮葉加工的基礎(chǔ)工序。指利用一定的溫度和濕度,將鮮葉均勻攤放,使其散失適當(dāng)?shù)乃趾颓嗖輾猓屓~片變軟,促進(jìn)酶的活性。通常有白光萎凋和室內(nèi)萎凋兩種方法。

2、揉捻、揉切是茶葉的塑形工序,揉捻使紅條茶卷曲成條,揉切使紅碎茶獲得緊細(xì)的顆粒。揉捻和揉切還能讓茶汁溢出,為紅茶內(nèi)質(zhì)的鮮爽提供條件。

3、發(fā)酵是紅茶形成品質(zhì)的重要工序。一般將揉捻后的茶葉稍加緊壓,再蓋上用溫水浸過的發(fā)酵布,通過溫度、濕度和氧氣的作用,形成紅茶特有的品質(zhì)。

4、干燥是鮮葉加工的最后一道工序,一般采用烘焙干燥。利用高溫蒸發(fā)水分,破壞酶的活化,利于保持品質(zhì)。
