釀皮用面粉制成,其做法是將面粉用涼水和成硬團,然后在清水中揉搓,使面粉中的蛋白質和淀粉分離。淀粉沉淀后傾去清水,加放食堿,調成面漿,舀入平底盤上籠蒸熟成片,涼冷后切成粗細長條即可。蛋白質則另外蒸熟,切成薄片,隨碗搭配。加上油潑辣椒、精鹽、醬油、蒜泥、芥末,香醋、芝麻醬等調料,再加一小撮青菜即可食用。具有色艷味美、涼爽利口、噴香解暑的特點。
