大漠風沙雞

“大漠風沙雞”是近年來比較流行的一道創新菜,因成品雞肉表面好像有一層基色的沙子,所以稱之為大漠風沙雞。

烹調方法:炸

味型:咸鮮微辣

主料:約3.5斤左右的土雞1只

輔料:蒜茸、面包糠、青紅椒沫

調料:鹽、味精、雞精

制作工藝:

1、用本地散養土雞,3.5斤左右,小火鹵制2小時左右。

2、將鹵制好的土雞取出風干2小時,掛脆皮水,入油鍋炸至金黃酥脆,改刀裝盤。

3、撒金沙(金沙料:蒜沫炸至金黃,配青椒沫、紅椒沫,加適量孜然粉)即可。

風味特點:

色澤金黃、入口松香,口味別致、酥脆

操作關鍵:

1、殺雞的時候一定要把雞血放干凈,將雞皮用熱水燙一下能讓雞皮更脆。

2、整雞切塊裝型。
