  在桂林市全州、灌陽(yáng)、興安等縣,解放前興種一季水稻,生長(zhǎng)期較長(zhǎng),又不施放農(nóng)藥化肥,便于稻田養(yǎng)魚。一般是禾苗中耕撤了石灰后,才放養(yǎng)鯉魚,一畝稻田放百把兩百尾當(dāng)年孵化的小魚苗。待稻穗黃邊時(shí),就可放水捉魚收獲了。禾花鯉魚長(zhǎng)得肥壯,肉厚細(xì)嫩,是淡水魚的上品之一

  禾花魚鮮吃,有炒魚片,也有黃燜、紅燒、清蒸,更多的是串湯。即選擇一二兩重的活魚,先在魚頸上割一刀,用手將魚膽擠出,把整個(gè)魚放入燒開了的豆豉生姜湯的鍋里,放鹽加蓋,待煮開后幾分鐘即可吃,可謂“雞吃叫、魚吃跳”其肉鮮嫩細(xì)滑,魚湯清甜可口。吃不完的鮮魚,就加工成臘魚,即將活魚破開肚子,掏出內(nèi)臟,放入缸(盆)里,加鹽、酒、生姜,腌制半天或一夜,然后拿出放到竹編上,下面燒谷殼火,由煙薰干,呈臘黃色,一股濃烈的臘香味。要食用時(shí),有炒青椒、酸菜,有油煎炸,也有用炭火烤熟,香味撲鼻,送飯送酒真是妙不可言。( 桂林)
