金錢鱔串

海南風味菜。白鱔的又一種烹調法,切圓形鱔片,用味料腌制后,成串油炸,可減除膠質油膩感,吃來鮮香干爽,回味無窮。

用料:

鮮活白鱔1條(重約600克)、雞蛋黃2個、生油2千克(實耗50克)、玫瑰露酒10克、生粉50克,姜、蔥、蒜頭、香菜、精鹽、味精、粗香料末、胡椒粉、香麻油各適量,紅辣椒少許。

制作:

1、將活白鱔宰殺洗凈,順勢斷切出圓形片,每片厚度0.5厘米。

2、將全部調味料搗碎攪勻,放魚片中腌制半小時后撈出,除去料渣,用蛋黃液伴勻,拍上干生粉,用竹簽穿成魚片串,每串5片,一共10串(視席位數而定)。

3、熱鍋落油,燒至五成熱度,將魚串放入油中,慢火浸炸至干身撈出,用腰子盤裝擺成扇形,再用小紅角椒切圓環,用青蔥切花串上辣椒環,順扇形擺在鱔串旁邊裝飾。

特點:

色澤焦黃,擺盤簡潔,鱔片形似金錢,外酥被嫩,香鮮爽口。
