火腿白菜

配料:

主料:白菜心500克,水發玉蘭片25克,熟火腿75克。

輔料:精鹽5克,味精3克,白糖2克,料酒4克,水淀粉25克,高湯250克,植物油500克(實耗100克)。

特色:色澤鮮艷,嫩軟鮮香。

操作:

1、將白菜心洗凈,控干水,切成長條。火腿切成片。玉蘭切成片。

2、將植物油放入鍋內燒至六成熱,放入白菜心稍炸一下撈出,控凈油。

3、將鍋內放少許油,加入高湯、白菜、料酒、精鹽、白糖;再把火腿片、玉蘭片沿鍋邊下鍋燒約兩分鐘,加入味精,先把白菜心盛于盤內,鍋再上火,用水淀粉勾芡,澆在白菜上即成。
