黃袍拜君王

黃袍拜君王:用滬溪河中的黃魚角燒上清豆腐,就叫“黃袍拜君王”。它的做法是先將黃魚角用油略煎,加入米酒釀、生姜片、蔥、整個紅椒、鹽等,倒入高湯,用旺火將魚燒透,然后放入上清豆腐,微火燉十幾分鐘,撒上胡椒粉,大家嘗嘗,味道好極了。這道菜的菜名還有一個故事呢。據說乾隆皇帝微服私訪來到上清鎮,五十六代天師張遇隆發現紫微星南移,便知皇上駕到。天師先在家設好盛宴,再請這位“生客”來家一敘。席間,上了一道黃魚角燜豆腐,乾隆覺得味道特別鮮美,便借問菜名,天師一語雙關道:“這叫黃袍御史拜君王。”乾隆心里暗暗吃驚:“天師果真厲害!”口中卻連聲稱贊味道好。這道菜也因此成為當地的名菜。
