清蒸鮑魚

主料輔料:

凈鮮鮑魚20克、鹽5克、料酒10克、蔥10克、味精2克、姜50克醋25克、花椒10粒、醬油15克、香油5克、湯l00克

烹制方法:

1、將鮑魚兩面剞上斜直刀,由中間切開。蔥切條,姜一半切末,另一半切片。

2、將鮑魚擺盤中,加料酒、味精、湯、蔥條、姜片、花椒和鹽,上展蒸10分鐘左右取出,揀出蔥、姜、花椒。

3、再用碗加醋、醬油、姜末、香油兌成姜汁,食時,將鮑魚蘸姜汁吃。

4、加工姜末時,要細小均勻,案板要干凈。
