碾饌兒

“碾饌兒”是寧夏回民喜歡的一種小食品。

做法是將籽粒飽滿的青稞穗摘來,裝入毛線口袋里反復甩拌,去掉耙麥芒、皮殼。然后放入大鍋中爆炒,炒成能吃的“青籽兒”,再放到筐籮里,揉搓篩簸,吹去灰塵及薄皮殼兒,放入石磨上推碾,磨兩遍,變成青綠色粉條狀食品,這就是寧夏回民的“碾饌兒”。食用時,加鹽、醋、油、辣湯等調味品,就食酸菜,拌以蒜瓣。

“碾饌兒”的特點:翠綠松軟,清香好吃。有的回族群眾磨下的碾饌兒吃不完,曬干冬天吃。用開水浸泡,稍帶酸味、味道很美。而且含有豐富的蛋白質、脂肪、葡萄糖和其它維生素。寧夏回民還用干“碾饌兒”醫治痢疾和消化不良等疾病。
