寧夏傳統地方風味食品,用寧夏“灘羊”中的羯羊烹制,瘦肉多,肉質嫩,易消化,無膻味,蛋白質豐富。成品色香味俱全,無油膩感。制法:將羯羊肉切成2斤左右的大塊,投入開水中,加花椒、小苗香、八角、桂皮和杏、桔皮干等調料,燉煮至手提羊骨一抖而骨肉分離時即成。另備各種調料,如:芝麻醬、豆腐乳(調成汁)、腌韭菜花、醬油、醋、蔥花、蒜泥、辣椒油等,然后根據各人愛好調在小碗內,用手抓著羊肉蘸醬食用。
