鹽水肫花

材料:

雞肫250克。精鹽3克、姜、蔥各10克、料酒10克、花椒2克、鮮湯50克、香油10克、味精0.5克

做法:

雞腕去內金洗凈,去雞肫外表皮的白肋膜,改成四瓣)再用直刀刻成十字花刀(刀距為2毫米,深度達4/5),然后裝入蒸碗,加精鹽、姜、蔥、料酒、味精、鮮湯、花椒入籠用旺火蒸至熟透,取出晾冷,裝盤,原汁加香油淋干肫花上即成。

此菜可用煮的方式。如蒸時加五香粉或裝盤后淋上椒鹽汁,則為五香腕花或椒鹽膿花。
