煙臺的鮮魚水餃,具有鮮嫩、個大、餡多、皮薄的特點。鲅魚、牙鲆魚都是入餡的佳品。

所謂鮮嫩,即魚剛獵獲不久,甚至切成的魚塊還在活動。將切碎的魚放入醬油、蔥花、姜末等調料攪拌,叫“透味”。在和餡時,要兌適量的水攪勻,這樣的水餃才夠鮮嫩。實踐證明,魚餡餃子最喜韭菜,它的辛辣味,可使魚味更鮮。

鮮魚餃子皮兒,搟得精薄,幾乎透出餡來。包時,因皮制宜,皮兒大,餡兒塞得飽滿,往往捏不嚴餃子邊,即使露了餡也混不了湯,它就像裹著一層薄皮兒的大魚丸子。所以,吃鮮魚餃子多用搗碎的大蒜配以醋、醬油、香油做調料,以利解膩、清口。
