叉子火燒已有三百年歷史,其原料有面粉、植物油、芝麻仁、花椒面、鹽和食堿等。制作工序有搓酥、和面、制坯、烘烤。烘烤時,先將帶芝麻仁的一面向下放入吊爐中,溫火烤至脫層,再翻烤另一面至黃色,并經(jīng)三次撣水,然后擺在烤叉上。烤好后,呈微黃色,入口麻香微咸,酥脆適度。便于攜帶,易于保存。
