蔥油目魚 

目魚,津菜俗稱“大鰨目”。學名半滑舌鰨,屬魚綱、鰈形目。目魚常棲息于附近的淺海底層中,為渤海灣特產之一。夏季咸、淡水魚類大多體瘦肉消,唯獨目魚魚體肥大、肉質鮮美,故津門有“伏天吃鰨目”之說。制法:(1)將2目魚尾部500克,剁成3厘米長、1.5厘米寬的骨牌塊,用料酒、姜汁略腌。(2)過熱油氽至八九成熟,再用開水焯過,以去掉浮油,用水過后再用鹽、味精入味,最后淋上用香油、蔥絲炸制的蔥油即成。特點:淡白素雅,蔥香濃郁,軟嫩爽滑,咸鮮味醇。
