巍山牛打滾
“牛打滾”是巍山地區地道小吃,外型上比較接近擂沙湯圓,因其做法中最后一道工序是在裝有黃豆面的盤中滾一遍,與牛在田間打滾有形似之處,故取其名。
原料:糯米300克,熟黃豆粉適量,芝麻20克,花生米20克,白糖等適量。
制作方法:先將芝麻、花生米炒熟,壓碎加白糖拌成餡,黃豆炒熟磨成干粉待用。糯米粉加溫水揉勻搓成條,下成10個大小均勻的劑子,搓圓后將中間捏窩包入餡心,又搓成湯圓形,放入開水鍋中煮熟,撈出放在裝有黃豆面的盤中滾一遍,粘滿豆面裝入盤中即可。
風味特色:色澤金黃,軟糯香甜。
