洱海之濱的白族村寨──喜洲,是一個風景漂亮的地方,當地白族人制作的“喜洲魚”,味道格外鮮美,具有濃厚的鄉土風味。喜洲魚選用洱海黃殼耳烹制。此魚頗似鯉魚,頭小、鱗細、肉多、刺少、鮮嫩。將黃殼魚去鱗,剖腹洗凈后,切為塊,放入缽內,加咸醬油,小茴香面、八角面、精鹽、黃酒腌半小時。然后將砂鍋置旺火上,注入熟豬油,炸黃蒜瓣,放入蔥段、姜片粉鍋,再放入肥瘦火腿片、水發冬菇煸炒,注入上湯,放入魚塊煮二十分鐘,加入味精、辣椒油即可食用。此菜魚鮮味濃,香辣爽口,回味無窮。
