韭菜花炒江蝦的原料:

韭菜花150克、長江小米蝦250克、辣鮮露5克、味精2克、姜絲5克、料酒5克、胡椒粉、熟菜油各適量。­

韭菜花炒江蝦的制法:

1、長江小米蝦瀝干水分,平底鍋燒至炙熱將蝦迅速倒入攤開,小火煎至殼變硬,用鍋鏟翻轉過來,將另一面也煎至殼變硬,至水分沒有出香味盛出。煎好的米蝦在太陽下曬一、兩天,這樣蝦的香味更濃,肉質也不會太干,還較為細嫩。

2、韭菜花去老頭洗凈切寸段,鍋燒熱放菜油適量炸香姜絲,放韭菜花炒至斷生,放米蝦,烹料酒、辣鮮露、胡椒粉、味精炒勻即可。
