筍是竹的嫩芽,其種類因竹而異,其中毛竹科筍,被譽為“八閩山珍”,它脆嫩鮮美,營養豐富,素有宮廷美食之稱。筍干是用春筍經過傳統制作方法加工而成的,分榨、曬、熏三大類。因制作方法不同,加工成的筍干品種也不同。有“玉蘭片”“鳳尾筍”“羊角筍”等十多種。筍干色、香、味俱全,含有豐富的蛋白質和人體所必需的多種氨基酸、纖維素,可作為菜肴主料或配料。經傳統工藝精制的筍干和近年生產的“清水筍”罐頭,是福建省主要外銷產品,也是中外游客樂于爭購的佳品。
