玉蘭荷花

原料:

白荷花12片,豆沙餡160克,雞蛋清2個,面粉50克,糖桂花10克,植物油750克(實耗約50克)。

制法:

(1)荷花瓣洗凈,白布沾干水分,切去荷花梗部,切成兩片。

(2)豆沙餡分成24份,每片荷花上放一份餡心,對疊包好。

(3)面粉放碗內,放入雞蛋清加水攪拌成糊。

(4)炒鍋燒熱,放油燒至五成熱,改用小火,將包疊好的荷花片放入面粉糊內掛滿糊,用筷子挾入油鍋中炸至浮起撈出,分3次炸,每次可炸8片。全部炸好后改用中火,待油溫燒至六成熱,再將炸過的荷花片投入重炸一下,邊炸邊用手勺撥動,炸見荷花片呈淺黃色時撈出,撒上糖桂花即成。

特點:荷桂芳香,味甜鮮香,清暑降濁,養心安神。
