新晃臘肉

用鮮豬肉熏制而成,是侗家待客的佳肴。侗族人民有飼養肥豬的習慣,每年春節前夕,家家戶戶宰殺年豬,除留少量鮮肉過年食用外,其余均分塊抹鹽掛在火鋪的炕上熏烤,待立春過后,再取下來通風處或倉內,可保存半年以上。食用時先在火上將肉皮燒焦,再在淘米水內洗干凈,切開其瘦肉呈深紅色,煮炒后,臘味香濃。待客的臘肉,切塊很大,如切小怕客人北地議論主人小氣。
