  牛是反芻動物,與其他的家畜不同,最大的特點是有四個胃,分別是瘤胃、網胃(蜂巢胃)、瓣胃(百葉胃,俗稱牛百葉)和皺胃。前3個胃里面沒有胃腺,不分泌胃液,統稱為前胃。第四個胃有胃腺,能分泌消化液,與豬和人的胃類似,所以也叫真胃。牛所食入的粗飼料主要靠瘤胃內的微生物發酵分解成可吸收、利用的物質。

牛百葉還分兩種,吃飼料長大的牛百葉發黑,吃糧食莊稼長大的牛百葉發黃。

牛百葉也叫毛肚;白色的毛肚是漂過的。
