紅燒鱔片

  紅燒鱔片以黃鱔為主料。黃鱔,又名鱔魚,俗稱長魚、無鱗公子。湖南為主要產區之一,以洞庭湖區生產最多。鱔魚每100克含蛋白質17.2-18.8 克,脂肪0.9-1.2克,此外,還含有鈣、磷、鐵等礦物質。中醫認為其味甘,性溫,有補虛損、去風濕、強筋骨、壯腎陽之功效。《本草綱目》載:鱔血可“ 治耳痛、治鼻衄”。鱔魚肉質細嫩,刺少肉厚,每年5至6月鱔魚最為肥壯,以紅燒法烹之,鱔片鮮嫩清潤,醇香柔軟。民間還有“小暑黃鱔賽人參”之說。此菜系湖南的傳統名菜。
