“無錫肉骨頭”又稱“醬排骨”,是無錫歷史悠久的著名地方風味菜肴。它肉質酥爛,味香濃郁,肥而不膩,甜咸適口,色澤紫紅,香氣撲鼻。相傳此菜始于宋朝,由無錫城里一家熟肉店在被其接濟過的“濟公活佛”的幫助下創制而成,“無錫肉骨頭”便由此出名,歷代相傳。到了清朝,無錫南門的“莫興盛”經營的醬肉排骨亦很出名。后來無錫三風橋附近的余慎肉食店,高薪聘請燒肉師傅,吸取別店的經驗,在選料、調味、操作等方面加以改進,專門選無錫出產的細皮白肉豬的大排和方肉為原料,用純黃豆制的醬油、上品老酒、糖等烹制,將方肉與排骨同煮,使湯汁更加濃醇和鮮美。這樣烹制出來的排骨,不僅外濃味鮮,肉松骨酥,而且香味濃郁,異常入味。在清末時,三風橋肉骨頭便和無錫清水油面筋、惠山泥阿福并列為無錫三大名產而馳名中外。(無錫)
