揚(yáng)州風(fēng)味小吃,以面團(tuán)糊制皮,包入筍肉餡,經(jīng)炸至而成;色澤金黃,外脆里嫩,口味鮮美。

原料:(制100個(gè))面粉500克,雞蛋3個(gè),瘦豬肉絲500克,白糖25克,冬筍500克,醬油75克,紹酒25克,濕淀粉125克,味精15克,芝麻油50克,花生油1600克(耗350克)。

制作方法:1、冬筍用沸水焯過(guò)后切成絲。炒鍋加熱,加入花生油50克,先將肉絲煸炒后,再投入筍絲、白糖、紹酒、醬油、味精及清水50克,待沸后即用淀粉濕勾芡,最后淋上芝麻油,出鍋冷卻即成筍肉餡心。

2、將炒鍋燒熱,用油布抹一層花生油后,繼續(xù)加溫,并不時(shí)的轉(zhuǎn)動(dòng)鍋底,使鍋邊周圍均勻受熱,待燒至六成熱時(shí),取1/10面槳入鍋中,隨即將鍋端起,向四周轉(zhuǎn)動(dòng),使面槳攤成直徑27厘米,厚薄均勻的圓皮子,待皮子初步成熟時(shí),把鍋端離火口,取餡心100克,放在面皮中間鋪平。隨后四周向內(nèi)折起,包成20厘米長(zhǎng),10厘米寬的長(zhǎng)方形薄塊,然后仍把鍋端回火上,注入花生油25克,用中火略烘,取出成鍋餅坯。

3、鍋熱加入花生油,燒至六成熱,將鍋餅坯放入,并不斷翻動(dòng),不時(shí)用熱油澆餅坯上面部委,使其充分受熱,待炸至金黃色時(shí),撈出瀝油即成。
