“徽川餅”經不斷的改良,餡心品種已增多,有棗泥餡、五仁餡、干菜餡、火腿餡、香腸餡、肉松餡等,更名為揚州餅,為群眾喜食的揚州風味小吃之一。

100℃溫水250克徐徐倒入,同時將面粉與水拌和,揉成面團,再反復搋揉至面團軟潤發光時,撳成長方形面塊,將酥面均勻地鋪在面塊上,包卷后用搟面杖輕輕壓幾下,再搓成圓長條,分摘成大小相等的面劑30只。肉松餡:將豬板油(500克)制成咸板油丁(方法見火腿餡)。將咸板油丁、肉松(250克)放入缽內,加入蔥末(100克)拌勻。
