壇子糕

一、制作材料:

軟米3000克,棗泥餡1000克,熟豬油2000克。

壇子糕的特色:色澤金黃,細軟香酣。

二、如何做壇子糕

1.將米用冷溫水淘凈,浸泡5小時,撈出瀝去水分,壓成細面,過細羅,面內加少許水拌勻,入籠蒸熟取出,分成50個劑子,搟成小餅,包入棗泥餡成半月形。

2.炒鍋內加油燒至七成熱,逐個下入炸至金黃色,撈出放入壇子內,上面再倒入熱油蓋嚴,置保溫處,吃時撈出即成。

三、制作要領:制作的生坯要均勻,油炸時溫度不宜過高。

四、壇子糕的特色:色澤金黃,細軟香酣。
